Although studies suggest that it does no harm to the human body, its excessive use could still be destructive in the food world. “No MSG” has been a popular phrase for marketing foods to the <span style="12pt; font-family: Georgia; color: rgb(0, 0, 0); background-color: transparent; font-weight: 700; font-variant-numeric: normal; font-variant-east-asian: normal; vertical-align: baseline; white-space: pre-wrap;">health-conscious [1] public. The name “MSG” sounds rather inorganic, adding to people’s fear of artificial, unnatural sources of food, just like GMOs (Genetically Modified Organisms) or food dyes.  What is MSG exactly? MSG, the abbreviation for Monosodium glutamate, is a flavor enhancer. It does not improve the sweet, sour, salty, or bitter profiles of food, and only improves the taste of umami, also known as savoriness or meatiness. Usually applied to salty, savory foods like broth and meat, it boosts flavor dramatically, especially when coupled with added salt. In Korea, there is even a popular seasoning called <span style="12pt; font-family: Georgia; color: rgb(0, 0, 0); background-color: transparent; font-style: italic; font-variant-numeric: normal; font-variant-east-asian: normal; vertical-align: baseline; white-space: pre-wrap;">mat-sogum,<span style="12pt; font-family: Georgia; color: rgb(0, 0, 0); background-color: transparent; font-style: italic; font-variant-numeric: normal; font-variant-east-asian: normal; vertical-align: baseline; white-space: pre-wrap;"> meaning “flavor salt,” which is created by combining MSG with traditional table salt.   MSG was first synthesized in 1908 by a Japanese biochemist, <span style="12pt; font-family: Georgia; color: rgb(0, 0, 0); background-color: transparent; font-weight: 700; font-variant-numeric: normal; font-variant-east-asian: normal; vertical-align: baseline; white-space: pre-wrap;">deriving [2] the substance from kelp. The large, brown seaweed had long been a major ingredient for Japanese cuisine, brewed to extract <span style="12pt; font-family: Georgia; color: rgb(0, 0, 0); background-color: transparent; font-style: italic; font-variant-numeric: normal; font-variant-east-asian: normal; vertical-align: baseline; white-space: pre-wrap;">dashi stock with a rich umami taste. The only thing Dr. Ikeda did was to isolate the key element from the seaweed and turn it into a form of powder. More than a hundred years later, MSG is now primarily made through fermentation of starch, sugar beets, and other plant based ingredients. Glutamates also naturally occur in an array of savory foods, including meat, cheese, and soy sauce. Some vegetables, such as broccoli, mushroom, and tomatoes, also contain a high level of the compound and result in extremely satisfying flavors when cooked. It is unsurprising that studies have failed to prove that MSG has adverse effects on our body, since humans have been consuming the substance through natural foods for hundreds and thousands of years without apparent problems.  Like salt and sugar, MSG is just another type of seasoning that easily enhances a specific taste. However, what makes it troublesome is that MSG makes it too easy to make food appetizing without quality ingredients. In order to make good-tasting, nutritious food, one has to cook with a sufficient amount of fresh vegetables and healthy proteins. These foods do not require much added MSG, if at all, since there are already enough flavors from the raw ingredients. On the other hand, when the ingredients are poor-quality or used minimally to meet cost requirements, MSG becomes necessary.  With its strong power to instantly please the tongue, MSG could also be addictive. To make up for using economical ingredients with weak flavors, MSG is used heavily in fast food and low quality frozen dinners. Since naturally existing glutamates may not be as satisfying as the artificially concentrated seasoning, one may end up choosing the less healthy option in the name of instant <span style="12pt; font-family: Georgia; color: rgb(0, 0, 0); background-color: transparent; font-weight: 700; font-variant-numeric: normal; font-variant-east-asian: normal; vertical-align: baseline; white-space: pre-wrap;">gratification [3]. MSG is not some alien substance that you should be scared of eating. What’s important to remember, however, is that if more cooks and manufacturers rely on MSG to easily make “tasty” food, there would be less demand for quality ingredients as well as the healthy foods that fully utilize them. Remember that this magical chemical already exists in nature, which becomes enhanced by cooking and fermentation–look for foods with no added MSG to enjoy a greater, purer variety of savoriness.
