Intro

A popular phrase in American culture - “You are what you eat” - highlights the subtle but important impact that our dietary choices have on our life and well-being. In a world riddled with food distribution and cultivation concerns, progressive movements like the ‘farm-to-table’ one have emerged from food capitals like NYC to help steer the future course of food more positively. In this lesson, you will learn about renowned chefs like Dan Barber leading their own movements.

In Slides 7-18 you will find a Youtube video and article describing the farm-to-table movement and, in particular, Dan Barber’s journey as a farm-to-table chef and creator Third Plate ideology, Barber promotes an enlightened future direction for food that promotes our rich cultural past with food and supports the natural resources providing our food.

Slides 22-25 underscore the limitations of these kinds of movements by chefs who cannot alone fully address global food dilemmas caused by greater issues like population growth and climate change.
