However, not many of us truly understand this multifaceted [1] taste that has long existed in key foods of human history. <span style="font-family:Georgia;color:#000000;background-color:transparent;font-weight:400;font-style:normal;font-variant:normal;text-decoration:none;vertical-align:baseline;white-space:pre;white-space:pre-wrap;">For decades, scientists and doctors recognized only four taste groups: sweet, sour, salty, and bitter. We were also taught only these four tastes, with the common misconception that each taste had a designated section within the tongue. Yet, the world has finally acknowledged the fifth taste, often called umami or savoriness, and it is now considered a very important factor that makes food delicious. <span style="font-family:Georgia;color:#000000;background-color:transparent;font-weight:400;font-style:normal;font-variant:normal;text-decoration:none;vertical-align:baseline;white-space:pre;white-space:pre-wrap;">The taste of umami has remained unidentified for a long time due to its less-noticeable characteristics than other major tastes, although we have been eating it for a very long time. It is difficult to identify what exactly makes something “savory.”  When you taste glutamates alone—the group of amino acids that are responsible for savoriness–the main sensations you feel are salivation and stickiness on the tongue, throat, and the back of the mouth. Although it does not sound pleasant as a single flavor, it adds much complexity when coupled with other tastes.  <span style="font-family:Georgia;color:#000000;background-color:transparent;font-weight:400;font-style:normal;font-variant:normal;text-decoration:none;vertical-align:baseline;white-space:pre;white-space:pre-wrap;">Because of its <span style="font-family:Georgia;color:#000000;background-color:transparent;font-weight:700;font-style:normal;font-variant:normal;text-decoration:none;vertical-align:baseline;white-space:pre;white-space:pre-wrap;">subtle [2] <span style="font-family:Georgia;color:#000000;background-color:transparent;font-weight:400;font-style:normal;font-variant:normal;text-decoration:none;vertical-align:baseline;white-space:pre;white-space:pre-wrap;">nature, its first discovery by a Japanese researcher at Tokyo University in 1908 was not taken seriously by the rest of the world, especially in Western countries. Dr. Kikunae Ikeda, umami’s founder, realized that glutamates were responsible for the <span style="font-family:Georgia;color:#000000;background-color:transparent;font-weight:700;font-style:normal;font-variant:normal;text-decoration:none;vertical-align:baseline;white-space:pre;white-space:pre-wrap;">palatability [3] <span style="font-family:Georgia;color:#000000;background-color:transparent;font-weight:400;font-style:normal;font-variant:normal;text-decoration:none;vertical-align:baseline;white-space:pre;white-space:pre-wrap;">of Japan’s major broth, <span style="font-family:Georgia;color:#000000;background-color:transparent;font-weight:400;font-style:italic;font-variant:normal;text-decoration:none;vertical-align:baseline;white-space:pre;white-space:pre-wrap;">Dashi<span style="font-family:Georgia;color:#000000;background-color:transparent;font-weight:400;font-style:normal;font-variant:normal;text-decoration:none;vertical-align:baseline;white-space:pre;white-space:pre-wrap;">, which is made with kelp. Having noticed that the central flavor of <span style="font-family:Georgia;color:#000000;background-color:transparent;font-weight:400;font-style:italic;font-variant:normal;text-decoration:none;vertical-align:baseline;white-space:pre;white-space:pre-wrap;">dashi <span style="font-family:Georgia;color:#000000;background-color:transparent;font-weight:400;font-style:normal;font-variant:normal;text-decoration:none;vertical-align:baseline;white-space:pre;white-space:pre-wrap;">broth<span style="font-family:Georgia;color:#000000;background-color:transparent;font-weight:400;font-style:italic;font-variant:normal;text-decoration:none;vertical-align:baseline;white-space:pre;white-space:pre-wrap;"> <span style="font-family:Georgia;color:#000000;background-color:transparent;font-weight:400;font-style:normal;font-variant:normal;text-decoration:none;vertical-align:baseline;white-space:pre;white-space:pre-wrap;">was different from the four major tastes, Ikeda named it umami.  <span style="font-family:Georgia;color:#000000;background-color:transparent;font-weight:400;font-style:normal;font-variant:normal;text-decoration:none;vertical-align:baseline;white-space:pre;white-space:pre-wrap;">For other communities around the world, it took more than half a century to accept the possibility of a new taste and finally take a serious look at it. In 1985, the Umami International Symposium, held in Hawaii, agreed to accept it as the fifth taste and to use the word umami as the official scientific term. For this to happen, researchers had to prove that the taste was independent, not able to be produced by combinations of other basic tastes. The other requirement was that umami would have its own taste receptors, which were soon discovered. In the 2000s, taste receptors for glutamates were discovered on the tongue as well as the small intestine.  <span style="font-family:Georgia;color:#000000;background-color:transparent;font-weight:400;font-style:normal;font-variant:normal;text-decoration:none;vertical-align:baseline;white-space:pre;white-space:pre-wrap;">For the general public, the term began to sound familiar with the introduction of MSGs, a flavor enhancer used commonly in the food industry. The substance was initially created by the same researcher from Japan, by isolating the savory substance from kelp and converting it into a powder. Many still fear MSG because of its artificial-sounding name and lack of familiarity, but umami has existed in the foods of almost all cultures in human history.  <span style="font-family:Georgia;color:#000000;background-color:transparent;font-weight:400;font-style:normal;font-variant:normal;text-decoration:none;vertical-align:baseline;white-space:pre;white-space:pre-wrap;">In fact, without MSGs or the understanding of umami, humans have a long history of cooking with glutamates to create tasty food. Garum, the first form of fish sauce, was very popular in ancient Rome as fermented fish contained a high level of glutamates. Fermented barley sauces, also rich in glutamates, were widely used in Arabic cuisines. Cooked meat and cured charcuterie, tomato sauces, cheeses, soy sauce, and broths are all products of thoughtful cooking that increase umami.  <span style="font-family:Georgia;color:#000000;background-color:transparent;font-weight:400;font-style:normal;font-variant:normal;text-decoration:none;vertical-align:baseline;white-space:pre;white-space:pre-wrap;">As humans are designed to favor sweet foods to fuel our body with starch and sugar, the umami taste is associated with amino acids, a main element of all proteins. The first umami taste most humans encounter is actually the amino acids in breast milk. Umami may be the first–not fifth–taste after all.
