The Life Behind the Kitchen Door

<span style="12pt; font-family: Georgia; color: rgb(0, 0, 0); background-color: transparent; font-weight: 700; font-variant-numeric: normal; font-variant-east-asian: normal; vertical-align: baseline; white-space: pre-wrap;">People visit fine dining restaurants to dine in a relaxing and stylish atmosphere, but those experiences are made possible by dedicated chefs who carry out onerous and repetitive tasks behind the scenes.  High-end restaurants are typically associated with dim lighting, elaborate table settings, and perfect plating. As such, you may <span style="12pt; font-family: Georgia; color: rgb(0, 0, 0); background-color: transparent; font-weight: 700; font-variant-numeric: normal; font-variant-east-asian: normal; vertical-align: baseline; white-space: pre-wrap;">romanticize [1] the lives of the chefs at these restaurants—thinking they only eat quality food and cook in graceful motions, with a thin smile on their face. However, life in the professional kitchen, especially the Michelin starred ones, is the exact opposite of peaceful; it consists of tough challenges that make many quit no matter how rewarding they may find the work. The first challenge is the extremely long hours. 14-hour shifts without breaks are not unusual, and you would be standing most of the time. If there are twenty dishes on the menu, the kitchen has to prepare more than a hundred, maybe two hundred, types of ingredients before the restaurant opens. Even the simplest item on the menu, like cream of mushroom soup, takes many elements to put together: one needs to cook the soup, slice mushrooms to sauté, whip fresh cream with a hint of thyme and oregano, chop fresh parsley, and fry perfectly golden-brown croutons with butter and pepper. Oh, don’t forget to shred a block of Parmigiano Reggiano to sprinkle on top.  With so many ingredients to wash, chop, and precook, chefs barely have the time to use the bathroom or drink water. Most kitchens serve their staff a family meal between service hours, but the reality is that there is usually less than ten minutes to <span style="12pt; font-family: Georgia; color: rgb(0, 0, 0); background-color: transparent; font-weight: 700; font-variant-numeric: normal; font-variant-east-asian: normal; vertical-align: baseline; white-space: pre-wrap;">chow down [2]. It is common for chefs to stand and gobble up a plate of food within five minutes and resume work.  In addition to long hours, chefs usually have to work weekends and holidays, too, as those are the busiest times for all types of restaurants. Many chefs do not get to spend much time with their family and friends because of this pattern.  Not only is the workload crushing, but the demand for perfection is also overwhelming. Extremely high standards apply to all aspects of cooking, from the precise cutting of carrots into 2mm-thick dice to maintaining cleanliness in the kitchen. Spinach leaves are blanched for precisely 23 seconds, neither 22 nor 24, and salmon filets are portioned to weigh exactly 85g each. In order to finish all of these meticulous tasks in time, chefs move around like ninjas without wasting a single movement or a second.  During service hours, the demand for speed and perfection rises even further. As orders come in, chefs in each section assemble dishes. The expeditor, who may be the head chef or a sous-chef, stands in front of the kitchen and supervises all sections, orchestrating the entire evening. Since most fine dining restaurants offer full-course meals, the expeditor manages the timing of each course, with diners all eating at different paces.  When the expeditor “fires” the next course, the corresponding station assembles it as quickly as possible—steak is cooked to exactly 58°C in the center and garnish is placed in its perfect spot. During the peak hours of the evening, there may be more than 15 steaks on the grill, some more cooked than others, all requiring different degrees of doneness. Mistakes are not well-received since they directly affect customer experience; the kitchen is full of pressure. This is when some chefs yell at cooks and even insults may be thrown around, as often captured by reality TV shows. Yet, there is no time to brood—a new batch of steaks have just been “fired.”   The last and the biggest challenge for chefs is that they are underpaid. Low wages and lack of benefits are the most common reason they leave the kitchen. Except for a select few, part-time chefs and head cooks usually don’t enjoy benefits like life and health insurance. This, coupled with the extreme lifestyle that takes a toll on their health, often forces them to quit. Moreover, kitchens of fine dining restaurants are more labor-intensive than any other dining establishments, and salary has been a long standing issue at these places. The world’s top restaurants attract a number of aspiring cooks and chefs to build their resumes and improve their culinary skills; some are even willing to work without pay. This “stage” culture, a form of unpaid internship, is still fairly common and accepted within the industry, discouraging restaurants from offering higher salaries and generous benefits.  Despite all this, many chefs take pride in their work and go back to the kitchen every day. Though the job may be tough and not well-paying, surviving a day in the kitchen is one of the most <span style="12pt; font-family: Georgia; color: rgb(0, 0, 0); background-color: transparent; font-weight: 700; font-variant-numeric: normal; font-variant-east-asian: normal; vertical-align: baseline; white-space: pre-wrap;">rewarding [3] feelings, and the staff becomes your family after months and years of working closely for over 12 hours a day. Most of all, they endure the kitchen life with their passion for artisanal cooking and dedication to serving great food to their guests–making their workplaces some of the most worthy restaurants to visit.
