Although it all began by emulating fancy restaurants in Paris, New York City (NYC) has become home to the world’s top restaurants by attracting passionate, talented chefs with its cultural diversity. NYC is a mecca of many things, including fashion, arts, finance—and last but not least, restaurants. With over 10,000 places that cook up a wide array of delicious fare every day for the locals and tourists, the dream city draws young, aspiring [1] chefs who want to hone [2] their skills and open their own restaurants one day. However, NYC’s wonderful culinary scene is a relatively recent development; in 18th century colonial America there were no sit-in restaurants or the establishments that we see today. Instead, people, mostly young men, gathered at taverns and coffee shops. They could eat and drink at these places, but the food was simple and casual, and there was no table service at all. These places were mainly for important social gatherings, while food played only a secondary role.  In the 19th century, alongside new businesses, a few “eating houses” sprang up in the city. These places initially catered to businessmen for lunch, but quickly became a fashionable place for young women to visit. To attract more customers, these establishments added nice decor and started offering friendly service.  In 1827, Italian-Swiss immigrant brothers who saw an opportunity opened Delmonico's in Manhattan, the first fine dining restaurant in America. It was modeled after luxurious restaurants in Paris and showcased a French chef, white tablecloths, and printed menus, catering to fashionable and wealthy New Yorkers. The restaurant business became so successful that they expanded it to four different locations. The restaurant industry continued to grow in the 20th century, now displaying a number of luxurious restaurants as well as oyster bars and steakhouses. In 1946, the public's enthusiasm for good food was fueled by the first cooking show on TV, hosted by James Beard. He became one of the first “celebrity chefs,” followed by major culinary figures like Julia Child, Joyce Chen, and Jacques Pépin. Visiting new restaurants and talking about these chefs and their food became a popular social activity. In the 1980s, there were some major shifts in the restaurant industry. Up until then, most restaurants in the city had waiters donning suits serving fancy French food and wines to tables covered with linen. A young restaurateur, named Danny Meyer, decided to try out a more contemporary [3] and American style by introducing more local produce and wines in a less formal and haughty atmosphere. Also, he wasn’t afraid of mixing different cultural elements in a single dish, such as soy-glazed tuna and risotto.  Meyer's first restaurant, Union Square Cafe, opened in 1985, and this modern, American eatery soon became one of the city's most popular places. A number of French chefs who were tired of antiquated traditions and boundaries, including the famous Jean-Georges Vongerichten, Eric Ripert, and Daniel Boulud, flew over to NYC to join the burgeoning scene. The mass of talent gathered in New York encouraged risk-taking and pushed the industry forward, giving birth to wonderfully modern and creative cuisines that freely incorporated different elements from various cultures.  In 2005, the first Michelin guide for America was finally published, covering 500 restaurants and 50 hotels in NYC. In the following year, 36 New York restaurants received their first Michelin stars, most of them serving American or French food. Now the list of starred restaurants has grown to include 68 restaurants, including Korean, Japanese, Fusion, Contemporary, Mexican, Austrian, and even Scandinavian cuisines.  Like San Francisco and Los Angeles, other cities in America, especially those on the West Coast where exceptional produce is abundant, are attractive destinations for chefs. Some argue that San Francisco, with 50 Michelin starred restaurants as of 2021, including the acclaimed French Laundry, has a more interesting and creative culinary scene than The Big Apple. Nonetheless, due to its diversity and legacy, NYC still holds the reputation of a culinary capital for diners and chefs, not only in America, but also globally.
