Why should you eat seasonal [1] food?Seasonality of food is a concept familiar to many of us. Restaurants often offer seasonal menu items, and we learn in school that watermelons are harvested in summer and pumpkins in fall. Yet, the types of fresh produce that were once seasonal food are increasingly available for longer periods or even year-round. Produce trades between countries are more active than ever, and the percentage of imported fruits has increased in multiple countries. In the U.S., fresh fruit imports went from 5 billion dollars in 2009 to 14 billion dollars in 2019. With much fresh produce available throughout the year, it’s difficult to naturally learn what grows when. Outside their natural growing seasons, fruits and vegetables grow in greenhouses or are imported from the other side of the planet to meet demands. However, there are strong reasons for preserving seasonality of food: to eat cheaper and healthier; to save the environment; and to keep the culinary world tasty and diverse.  First of all, it is simply cheaper to eat seasonally. It costs less to grow crops during their natural growing seasons. For example, asparagus is much cheaper in spring than in winter, as new shoots thrive [2] in warm soil and a lot of sunshine. Winter cultivation involves more energy expenditure, to warm the ground and make up for the lack of sunlight.    Growing something off-season is not the only part of year-around availability that needs additional resources. Seasonally harvested apples sit in special storage units for months wherein temperature and moisture levels are strictly controlled to keep them crisp.  Likewise, imported fruits depend on extensive storage systems during their entire shipment, as well as local distribution. Not surprisingly, the cost of storage adds up to what customers pay, not just at grocery stores but also at restaurants.  Seasonal foods also have more flavor and nutritional value. A number of studies have shown that nutritional content in fruits and vegetables remains the highest shortly post harvest and begins to decline rapidly as they sit in storage. Their taste also deteriorates over time regardless of how elaborate the storage system is. Even if produce [3] is carefully grown and freshly harvested in greenhouses, its taste does not quite replicate its in-season counterpart, as there is much more than temperature and lighting to what makes a season. Greenhouse maintenance, transportation, and storage puts a lot of burden on the planet with a high carbon footprint. However, it’s not just the greenhouse emissions from these practices but also the nature of conventional farming that has a negative impact on the environment. Typically, a farm does not grow different crops for different seasons and instead focuses on a single variety. However, this method depletes the soil of nutrients. On the other hand, crop rotation allows various plants to soak up and emit different chemicals from and into the ground, which act as natural fertilizers. To grow a single crop across a series of growing seasons, a farmer has to apply more artificial fertilizers and pesticides, which degrade the environment.  Besides the positive effects seasonal foods bring us and the Earth, much variety we see in the world today would not even exist without the changing seasons. Many of the food preserving techniques we know, such as fermentation, drying, and smoking, were invented to keep foods past their seasons. Pickles and kimchi were famously born out of efforts to store vegetables, which stay fresh only for a few weeks under natural conditions. By salting and fermenting cucumbers and cabbages, our ancestors found a way to enjoy them throughout winter and spring, until it was warm again and fresh ones could be picked from the fields in summer and early fall. Many of the world’s fun cultural assets have developed around seasonal availability as well. In America, pumpkin pies and apple pies are usually baked near Thanksgiving; family and friends in Korea come together in November for Kimjang, which is a communal kimchi making practice; Spain’s famous tomato festival, called La Tomatina, still takes place on the last Wednesday of August every year.  It may seem silly to wait for weeks and months before eating strawberries when we have all this technology stretching the availability of fresh produce. Yet, without the effort to keep seasonality intact, the food world may become less tasty and more boring, with adverse effects on our communities. The extra days endured for seasonal produce will surely bring more joy to you-- and the planet.

왜 우리는 제철 음식을 먹어야 할까요?음식에 제철이 있다는 것은 많은 사람들이 알고 있는 사실입니다. 식당들은 자주 제철메뉴를 내놓으며 우리는 학교에서 여름에는 수박이 나오고 가을에는 호박이 나온다는 것을 배웁니다. 그러나 예전에는 한철에만 먹을 수 있던 신선한 농작물들을 이제는 점차 오랜 기간 동안 혹은 심지어는 일년 내내 시장에서 구할 수 있게 되었습니다. 나라간의 농산물 교역은 그 어느 때보다 활발해져서 많은 나라에서 수입 과일이 차지하는 비율은 증가했습니다. 미국의 경우 수입되는 과일의 양은 2009년의 50억 달러에서 2019년 140억 달러 규모로 증가했습니다.  일년 내내 먹을 수 있는 농산물이 많아지면서 어느 과일이 언제 나는지를 자연스럽게 배우는 것이 어려워졌습니다. 과일이나 채소의 자연적인 재배 시기가 아닐 때에는, 비닐하우스에서 재배하거나 다른 나라에서 수입을 해와서 수요를 맞춥니다. 하지만 농산물을 제철에 키워 제철에 먹는 것은 여러 이유에서 매우 중요합니다. 더 저렴하고 건강하게 식품을 섭취하고, 환경을 보존하며, 음식문화의 다양성과 맛을 보존할 수 있기 때문입니다.  무엇보다 제철 식품은 가격이 쌉니다. 원래 자라는 시기에 작물을 기르는 것은 비용이 적게 들기 때문입니다. 예를 들어, 아스파라거스는 흙이 따뜻하고 햇빛이 좋아야 싹이 잘 자라기 때문에 겨울보다 봄에 가격이 훨씬 저렴합니다. 겨울에 재배하려면 지면의 보온과 부족한 햇빛의 보충을 위해 더 많은 에너지가 소모됩니다.  농산물을 일년 내내 공급하기 위해 추가로 자원이 들어가는 것은 비단 비철 재배뿐만이 아닙니다. 제철에 수확한 사과들은 아삭한 질감을 유지하기 위해 온도와 습도를 면밀하게 조절 가능하도록 특별히 만들어진 저장 창고에 몇 달간 보관됩니다. 마찬가지로 수입 과일들은 현지 유통 뿐 아니라 운반되는 기간 내내 고도의 저장 시스템을 필요로 합니다. 당연히 유통에 들어가는 이러한 비용은 시장 뿐만 아니라 식당에서도 소비자에게 고스란히 전가됩니다. 또한 제철 음식은 맛과 영양면에서 더 뛰어납니다. 여러 연구를 통해 과일과 채소의 영양성분은 수확 직후 가장 높고 저장 기간 동안 빠르게 감소하는 것으로 밝혀졌습니다. 고도로 발달된 저장 기술과는 상관 없이 시간이 지날수록 맛 또한 떨어집니다. 아무리 비닐하우스에서 정성껏 신선하게 재배한 작물이라 해도, 온도와 빛 외에 한 계절을 이루는 요소는 아주 많기 때문에 제철의 맛을 그대로 재현할 수는 없습니다.  비닐하우스 관리, 운송과 저장은 탄소배출량을 늘리며 지구에 많은 부담을 줍니다. 하지만 탄소배출 외에도 기존의 농사법은 그 성격상 환경에 부정적인 영향을 미칩니다. 일반적으로 한 농장은 계절마다 다른 작물을 기르지 않고 한 가지 작물만 집중해 재배합니다. 그러나 이 방법은 땅에 있는 영양분을 고갈해버립니다. 작물을 교대로 재배하면, 다양한 식물들이 각기 다른 물질을 땅에서 흡수하고 땅으로 배출함으로써 토양의 천연 비료 역할을 하게 됩니다. 여러 다른 작물을 재배할 시기에 걸쳐 한 가지 작물만 재배하려면 농부는 그만큼 더 많은 인공 비료와 농약을 사용해야 하며 이것은 환경을 파괴합니다.  제철음식이 사람과 지구에 미치는 좋은 영향 외에도, 우리가 지금 누리는 다양한 식문화는 계절의 변화 없이는 존재할 수 없었을 겁니다. 발효, 건조, 훈제 등 잘 알려진 음식 저장 기술은 제철이 지나서까지 음식을 보존해서 먹기 위해서 발명되었습니다. 피클과 김치는 그대로 두면 몇 주만에 부패할 채소를 오래 저장하기 위한 노력에서 생겨났습니다. 우리 조상들은 오이와 배추를 염장하고 발효함으로써 다시 여름과 초가을이 되어 신선한 채소를 수확할 수 있을 때까지 겨울과 봄 내내 그것들을 즐길 수 있는 방법을 찾은 것입니다. 전세계적으로 우리가 즐기는 다양한 문화도 제철음식을 따라 발전했습니다. 미국에서는 추수감사절이 다가오면 펌킨파이와 애플파이를 구워 먹고 한국에서는 11월이 되면 김장을 하기 위해 동네 사람들과 가족들이 다 같이 모입니다. 라 토마티나라고 불리는 스페인의 유명한 토마토 축제는 여전히 매년 8월의 마지막 수요일에 열립니다.  아무 때나 신선한 농작물을 먹을 수 있는 온갖 기술을 가진 우리가 보기에 딸기를 먹기 위해 몇 주나 몇 달을 기다리는 것은 우습게 보일지도 모릅니다. 하지만 농산물의 제철을 그대로 유지하려는 노력을 기울이지 않으면 우리의 터전에 부정적인 영향을 미치는 동시에 음식들이 점점 맛없어지고 뻔해질 가능성이 높습니다. 제철 농작물을 그리며 기다리는 그 시간은 우리에게 그리고 지구에게 더 큰 기쁨을 가져다 줄 것이 분명합니다.
